Danish Blue Cheese, 30%

This cheese is a light version of the 50% cheese with only 17% total fat. It is a white to yellowish cheese with nice blue-green veins and an open structure. The cheese is firm but sliceable and might crumble a bit. The taste has a good balance between mold, salt and the sweet taste of the cow’s milk. Taste is often sharp and salty.

Mycella / Bornzola 60%

Is a yellowish cheese with nice dark blue-green veins and an open structure. The cheese is firm with some irregular holes in it. Taste is mild and aromatic.

It is a white to yellowish cheese with nice dark blue-green veins and an open structure. The cheese is half firm and creamy but sliceable and might crumble a bit. The taste has a good balance between mold, salt and the creamy taste of the cow’s milk. Taste is often sharp and salty.

Bleu 50%

Is a blue and white molded cheese, with a dark green vein inside and a white mold on the surface, semi hard with few irregular holes in it. Consistency is creamy and sliceable. Taste is mild and aromatic. The cheese is only produced for the local market due to short shelf life.
